Settings
Floor configuration for Union Street. Changes take effect on the next controller read, about twenty seconds. Anyone on shift can change these; every change is logged with the lead’s name.
Ovens
Listed in the order they stand on the floor, north wall first. That order is what the Floor screen draws, so changing it here moves the cells on the wall display.
| OVEN | TYPE | CAPACITY | PREHEAT | IN SERVICE |
|---|---|---|---|---|
| DECK 1 | Stone deck, 5 shelves | 60 loaves | 22 min | |
| DECK 2 | Stone deck, 5 shelves | 60 loaves | 22 min | |
| DECK 3 | Stone deck, 5 shelves | 60 loaves | 22 min | |
| DECK 4 | Stone deck, 5 shelves | 60 loaves | 26 min | |
| DECK 5 | Stone deck, 4 shelves | 48 loaves | 22 min | |
| RACK 1 | Rotating rack | 18 trays | 14 min | |
| RACK 2 | Rotating rack | 18 trays | 14 min | |
| RACK 3 | Rotating rack | 18 trays | 14 min | |
| RACK 4 | Rotating rack. Element fault 02:40, Sutton & Co. booked 09:00 | 18 trays | n/a | |
| CONV 1 | Convection | 10 trays | 9 min | |
| CONV 2 | Convection | 10 trays | 9 min |
RACK 4 cannot be switched back on from here while an engineer visit is open. Close the fault first, or the board would schedule into a dead oven.
Shifts
Three shifts, no gap and no overlap. The Floor screen names the lead on duty so a delivery driver knows who to ask for.
Wall display
Screen 1 is bolted to the north wall between DECK 3 and DECK 4, read from about three metres. Screen 2 is by the packing bench.
What counts as late
Take an oven out of service
This stops the board scheduling into it and re-cuts every run already assigned to it. On a full night that moves eight to twelve runs and nobody can undo it from the floor. RACK 4 went out at 02:40 and RUN-4471 is still late because of it.
